Diablo’s Cantina is open 7 days a week, 11am to midnight. Lounge Hours are Sunday – Wednesday 11am to 2am. Thurs. to Sat. 11am–3am

The Light Group will add more sizzle to the Las Vegas Strip with the opening of its newest venture, Diablo’s Cantina at Monte Carlo Resort & Casino. The 13,000-square-foot multi-level entertainment complex will be “Party Central” for those looking to let loose in a lively fiesta-like atmosphere.

The first floor will incorporate the main dining area with a hip bar and lounge. Guests will be able to enter from a Strip-front entrance that will feature a walk-up frozen/specialty drink bar, or through the casino. The second floor will include an open-air center bar area and stage for live music, rotating entertainment acts and weekend DJ’s. The patio will be a perfect setting for carefree fun in the sun or under the desert moon.

The menu includes south-of-the-border favorites such as Diablo’s beef chili nachos, a spicy grilled shrimp quesadilla plus some traditional American classics that have been tweaked with a definite piquant touch, including Diablo Death wings and the Diablo's 15-ounce burger. The menu includes an array of appetizers, salads, taco and burrito combinations, sandwiches and entrees.

"Lunch Time (Sat)"

Diablos was definitely a friendly place. Of course at lunch time there's not much in the way of eye candy, except for the Female staff, definitely nice. Plasmas all around, so you can watch the game, great atmosphere. The food was great but the service left you waiting a little bit to long for things like drinks and refills. Pricing for the menu was about 8-16 dollars a plate the drinks a little pricey as well, A Corona went for $7 and a Mojito was $13. Our bill, for 2 people, two drinks and two lunch plates came out to be 53 dollars not including tip..Remember though it is on the strip and everything is a little pricier on the strip..We can see this place really rocking on a Fri or Sat night, especially since live bands play on the second level, and they do have HOT female staff. Sorry didn't see to many good looking male staff. Overall I rate this place high and will definitely go back..
